Hains and Co

When Marcus “The Admiral” Motteram moved back to Adelaide (after co-owning New Guernica and Chuckle Park in Melbourne), he found himself searching the laneways of Adelaide for something new. Enter Gilbert Place, where Motteram found the site that would become Hains & Co, his nautical-themed bar that’s open every day of the year except Christmas.

Tap beers change with seasons, and there are bottled options from the likes of Pirate Life, Moon Dog and Lord Nelson. Cocktails include the requisite Dark ‘n Stormy (Stolen Gold rum, lime and ginger beer), and the house gin and juice mixing Never Never Distilling Co’s Triple Juniper gin, Aperol, acidulated orange, and grapefruit juice. The bar also runs spirit tasting events and masterclasses for true booze enthusiasts.

To eat, there’s a cheese-heavy bar menu that includes a three-cheese toastie, cheese boards, and fries (potato and sweet potato) to be loaded up with optional cheese and napoli sauce. But since day one the cult dish has been the housemade sausage rolls with shiraz and black pepper chutney. The recipe came from “Tuckshop Tiff”, which Motteram poached from his kids’ school tuckshop.

In true sea captain style, you can even get the bar staff to match a cigar to your drink. They’re restocked frequently but come from a range of sources, namely Cuba, Nicaragua and the Dominican Republic, and may be enjoyed on the front deck.
