Born and raised in Germany, Fabian Lehmann’s career has global reach. He’s gone from Bad Zwischenahn in north-western Germany – where Lehmann did his apprenticeship at the Michelin-starred Apicius – to Hamburg, where he worked at the five-star hotel Grand Elysee.
In 2016, Lehmann and his wife Kayla relocated to her hometown of Adelaide where he took up the head chef role at McLaren Vale’s Maxwell Wines. Here, Lehmann marries his European technique with the best South Australian produce.
With eight years in Adelaide under his belt, Lehmann is an honorary South Australian, this is where he eats and drinks when he’s not behind the pass at his McLaren Vale restaurant.
What’s your favourite dish on the menu at Maxwell Wines?
I think the dish that truly stands out on the current menu is the marron. We serve the marron tail with a smoked hollandaise foam, fermented chilli and preserved tomatoes.
Is there a hidden gem that you think is underrated but great?
Definitely Ernest in Hahndorf. It’s a humble delicatessen that serves up some of the best sangas I've ever eaten. All of Jimmy’s [James Brinklow’s] food is spot-on and super delicious.
If it’s a special occasion, where are you headed?
Magill Estate Restaurant. Scott Huggins and his team are doing some amazing food. It’s creative, smart and most importantly super delicious.
Where’s your favourite spot to grab gelato?
Pizzateca in McLaren Vale has just opened an amazing gelato shop called Gelatecca right next door, where you find super fresh gelato made with local produce.
And for a drink and snacks?
The Salopian Inn in McLaren Vale has an amazing gin selection and great food with a big focus on local produce. Karena (Armstrong) and Alex will make you feel right at home in this very special spot in McLaren Vale.
Tell us about a local producer you can’t stop thinking about.
Section28 Cheeses in Woodside! Kym produces the best artisan alpine-style cheese in Australia and I have been working with him for years. His cheese always finds a way onto our menu at Maxwell Wines.
And where do you think does the best coffee in town?
This would have to be local Hills cafe Sazón Espresso. I visit on most of my days off to get my coffee fix. They also do a great casual brekkie.
