In 2012, a little slice of the outback made its way to the Central Market. Richard Gunner, of Feast! Fine Foods, set up Something Wild to connect city dwellers with the country, via the plate.
Kangaroo and crocodile are the quintessential Australian meats, but Something Wild – now majority-owned and managed by ex-Port Adelaide player Daniel Motlop – takes things further. When available, customers can pick up some magpie goose, or a nice bit of camel.
For newbies to outback game, tackle a sampler: a giant kebab featuring six meats and native greens, or game sausages spiced with Australian herbs. For those with a little more courage, take on a cut of Paroo Premium Kangaroo. If you’re not sure how to handle your chosen meat, the chatty staff can recommend recipes, marinades and sides.
