Spicers Sangoma takes its name from the Zulu word for a traditional healer, and healing is exactly what this luxe retreat aims to do. After a few hours spent healing yourself at the day spa, a long lunch at Restaurant Amara is the perfect prescription. It’s where you can soak up spectacular views over a five-course degustation, featuring produce from the surrounding Hawkesbury region.

Taking cues from the ultra-local ethos of European restaurants such as Christian Puglisi’s Relæ, everything on the menu here is grown or raised within an hour of the retreat. Community-supported agriculture project Harvest Farms supplies most of the veg, while Mt Tomah provides berries, figs and nuts. A beekeeper tends to a Flowhive on the property for fresh honey.

While vegetables are the hero, considered protein dishes also make a regular appearance on the lunch and dinner menus. Past highlights include beef with parsnip and snow peas; market fish with fennel and bisque; and chicken with mushroom and scallions. Amara is also known for its signature Bilpin Lemon dessert: a lemon mousse encased in a turmeric-yellow chocolate shell with a sable crumb that's absolutely worth travelling for.
