It would have been enough for Andrew McConnell to just bring Supernormal to Brisbane. But the star Melbourne chef spoiled the city with a second venue upstairs in the form of Bar Miette, an all-day diner serving the kind of European-inspired cuisine McConnell has become renowned for, most notably at Gimlet in Melbourne’s CBD.
Though European in style, Bar Miette is powered by produce from Brisbane and the Northern Rivers. Mornings might start with house-made spelt crumpets with whipped maple butter and banana. Later with anchovy Gildas, plates of trout crudo and cold roast chicken with celeriac, horseradish, capers and tarragon mustard dressing.
The wine and cocktail selection is similarly strong. Tropical versions of classic and aperitif cocktails reflect the Queensland climate and environment. Take the Jasmine, a gin cocktail traditionally made with Campari and triple sec. Here it's made with rhubarb and blood orange eau de vie.
At 70 seats, most of the Bar Miette experience takes place on the terrace, where you can see the City Cat and the giant trees of Kangaroo Point. But no matter where you sit, the venue is thoroughly relaxed and doesn’t demand hours-long seatings or a special occasion to enjoy.
