Friday October 25, 2024: When Snug opened in late March, owners Leaham Claydon and Jianne Jeoung hinted that they had plans to someday open the venue as a wine bar in the evenings. That day has come. Snug will open this afternoon with a selection of small plates, wine and beer. Claydon and Jeoung are serving an amped-up version of the Korean-accented food from their much-loved brunch menu. The pair is cooking from a pint-sized kitchen, so naturally there’s a focus on raw and barbequed dishes.

Cold dishes include appellation oysters served with a zingy apple and tuna mignonette, soy-marinated prawns and scallops, beef tartare served with egg yolk and gochujang, and kingfish with mandarin honey dashima (kelp sauce). Warm dishes include the stunning salted honey butter bread, sweet potato and corn dumplings, clams with doenjang butter and enoki mushrooms, and an abalone rice bowl. Snug will be open on Friday, Saturday and Sunday evenings from 4pm. Walk-ins only.

Snug co-owners, and couple, Leaham Claydon and Jianne Jeoung met while working at neighbouring restaurants. Claydon was a sous-chef at Yoko (before leading the kitchen) and Jeoung a senior chef at Greca. Now, the pair are behind Snug – a humble cafe in Coorparoo which serves drinks, brunch and baked goods.

The brunch menu features Korean-inspired dishes like scrambled egg brioche sandwiches, omurice with prawns and a twist on Korean corn cheese with artichokes and provolone cheese. The house bakery selection is inspired by Korean cafe staples, like soft pretzels and salty butter rolls (folded like a croissant, with a generous chunk of butter inside). For coffee, there’s St Ali’s Wide Awake blend, a dark roast with chocolate and caramel notes.

On a trip to Korea, the duo handmade ceramic tableware with Jeoung’s aunties in Daejong, including plates, bowls, coffee cups and pour-over coffee makers – all of which have been put to use. The space itself offers a timeless aesthetic with lots of timber (including a striking custom benchtop by Makimaki), complemented by olive-green features and plants.
