Offering a lavish, resort-style dining experience, 8 at Trinity is a pop-up restaurant on the shores of Lake Macquarie, just 90-minutes’ drive north of Sydney. The 350-seat venue is the first instalment in the $580-million-dollar Trinity Point Development, which is set to include a five-star hotel, 180 waterfront apartments, a day spa and wellness centre, and a 188-berth marina.

Competing for your attention is a lengthy menu, striking architecture and supreme water views. The former packs in plenty of options for all occasions and diets. There are five different Wagyu steak options alone, plus a signature crab spaghettini and pizzas fired in a gold-tiled Italian woodfire oven. Seafood is naturally a focus, and you'll find cold platters, Singapore chilli prawns and a whole Hong Kong-style lobster to share.

On the cocktail menu, a range of classics (Martini, Cosmopolitan, Negroni and friends) is joined by decadent signatures. There's also a wine list of both local and international drops to choose from, and the venue even has its own bottle shop if you need to stock up before you leave.
