From beer and wine to whisky and other spirits, The Iron House Brewery & Distillery does it all. Located in the White Sands Resort on the edge of Tasmania’s east coast, this ambitious operation started life as a brewery in 2007 before later stepping up to single malt whisky and spirits production.

Brewer and distiller Michael Briggs, whose father purchased White Sands Resort in the early 2000s, made the decision to add whisky making to Iron House to better use the site’s brewing capacity. Spirit was initially filled into cask in 2015, and Briggs waited four long years before launching the Tasman Whisky range, matured in former port, sherry and bourbon casks.

His most unusual whisky release, though, is the Tasman Whisky Pinot Finish Cask. After an initial five-year maturation in port casks from Portugal, Tasman Whisky was then transferred to a French oak barrel that once housed Iron House Vineyard Pinot Noir, creating an in-house cask finish that’s rarely seen.

Visitors to Iron House are spoilt for choice, with any number of drinks to try and experiences to explore, and a range of villas to stay the night in.
