When Cam and Suzy Brett wanted to turn their passion for single malt whisky into a fully-fledged distillery, they chose Spring Beach on the east coast of Tasmania as the perfect home. The Bretts had frequented the area for almost two decades, and wanted to create a maritime-influenced single malt similar to those from Campbeltown in Scotland that could speak to their location on the coast.

They got to work on that idea in 2015 and brought Spring Bay Distillery to life. Initially, high-quality gin and vodka were released while the whisky matured, and the first Spring Bay single malts were released in 2017. The whiskies instantly won fans for their distinctiveness and subtlety, especially the tropical, coastal Bourbon Cask offering, which remains one of the distillery’s most highly regarded and sought-after expressions.

Visitors can pop into the distillery in Spring Beach for gin and whisky tasting flights as well as more in-depth premium whisky tastings. A second Spring Bay site in Cambridge, 15 minutes from Hobart, is also open Monday to Friday for those interested in a dedicated distillery tour.
