Callington Mill Distillery

Callington Mill Distillery is one of Tasmania’s most ambitious whisky ventures. Centred around a historic 19th-century mill in the town of Oatlands, roughly halfway between Hobart and Launceston, Callington’s size, scale and modern architectural design signalled a new direction for Tasmanian whisky when it was completed in 2021.

The visitor experience at Callington is one of the heartland’s major attractions, which sees the heritage precinct brought to life with audio and video activations, as well as self-guided tours, bottle-your-own whisky experiences, and whisky tasting flights available seven days a week.

Then there’s the striking cellar door restaurant and bar – a cut above the norm for a distillery anywhere. Standout dishes include cauliflower arancini; squid ink spaghetti vongole; and cajun-spiced wallaby with smoky tomato salsa and yoghurt. Plus, locally sourced cheese and charcuterie.

Callington was founded by former property developer John Ibrahim and brothers Salim and Danny Nicolas, after investing in numerous whisky ventures by Bill Lark (including Old Kempton Distillery), the godfather of Australian whisky.
