Freshness. Dan “Tallboy” Hall and Canadian Steve “Moose” Germain are so serious about it, they limited the size of their brewery.

Three fermentation tanks occupy a small corner of the warehouse, overlooked by a quirky, vaguely Picasso-esque feature wall by fine artist Simon Massey di Vallazza. Together, these vessels hold just 3600 litres. The idea is that they turn over more quickly, increasing freshness. They also let Hall – a professional brewer who’s spent time at Moon Dog and Hawkers – experiment more.

The bar’s eight beer taps are split evenly between Hall’s creations (usually accessible and easy-drinking) and bolder guest beers for hardcore drinkers.

If a beer really takes your fancy, look to the “crowler”, aka “canimal”, aka reverse can opener. Watch while the impressive machine seals a litre of beer inside a giant can for you to take home.

Food trucks also visit the site on weekends, or you can order in.
