You’ve heard of a cheese pull, but how about a custard one?

New York bakery Lafayette went viral earlier this year when it started selling Suprêmes – chunky, circular, custard-loaded croissants drizzled with ganache and topped with all sorts of crunchy goodness. Gnarly videos of sweet fiends tearing them in half quickly started appearing online.

Now, new Melbourne bakery Calle is bringing its own version to Carlton North.

Since opening in August, the new addition to Rathdowne Village has been serving traditional sourdough and French pastries, stacked sangas, and weekend-only croissant “wheels”, which Calle’s Vivian Ly says were inspired by the ones at Lafayette.

“We’re producing approximately 200 per day on both Saturdays and Sundays,” she says of the two-hands-necessary creations. But, “We plan to increase volumes to meet demand over the coming weeks.”

The flavours will change every month. Currently, there’s pistachio, filled with creamy house-made pistachio custard and topped with crushed pistachios; and black sesame, with a nutty, custardy black-sesame filling, crowned with sesame praline.

Upcoming flavours will include – but are not limited to – pandan, strawberries and cream, Earl Grey, jasmine and lychee, and chocolate ganache.

The croissant wheels are only available on Saturdays and Sundays.
