In 2021, Ben Shewry’s Attica Summer Camp popped up in the Yarra Valley with a fun, sophisticated menu starring hasselback potatoes, cherry-topped chicken liver pate and frozen riesling. But the dessert trolley, filled with ultra-light sponge cakes, trifles, tarts and more by pastry chef Rosemary Andrews, lingers in our minds to this day.

Now, after side hustles selling sought-after dessert boxes online and hosting a few wildly successful pop-ups around Melbourne (including at Richmond’s Co Bake Space earlier this year), Andrews is opening a bakery of her own – albeit a temporary one.

Mietta by Rosemary Andrews is due to open on Glenferrie Road, near Malvern Central shopping centre, this December under a six-month lease. Andrews tells Broadsheet she’s using the space, with an elegant fit-out courtesy of Design by Golden (Moby, The Penny Drop), as a way to test the market and grow the Mietta brand.

Andrews describes her sweets as “classic bakes with a little contemporary finesse”, designed to showcase the beauty of individual ingredients. At Mietta, you’ll find her hit eight-layer carrot cake, seven-layer honey-miso cake, cheesecake, two-texture chocolate cake and more.

Opening her own bricks-and-mortar store is a “huge level up”, she says. If the six-month pop-up is successful, she plans to work with a property developer to open in a bigger location with dine-in space, more products and an expanded pastry team.
