Love to lunch? So does the Etta team. That’s why head chef Rosheen Kaul and owner Hannah Green are starting a new Saturday lunch service, “On Saturdays, We Lunch”, at their Brunswick East restaurant.
Fresh off a James Beard Award nomination for her cookbook Chinese-ish, Kaul will spend Saturdays stacking seafood towers with a weekly-rotating selection of some of the finest shellfish around.
“We just really love seafood, and the cold weather is bringing in some of the best,” Kaul tells Broadsheet. “I’m also using lots of Southeast Asian preparations because feasting [on] seafood on the beach in Singapore and Indonesia with my family are some of my favourite childhood memories.”

SIGN UP“On Saturdays, We Lunch” starts May 20, with seafood towers heaped with dishes like grilled arrow squid skewers with a lemon balm and calamansi lime sauce; steamed diamond shell clams with lemongrass; and king prawns in fish sauce and fermented chilli butter. The meal is $70 per person and will be available during Saturday lunch service in addition to Etta’s regular menu.
To match, Green will dip into Etta’s cellar and offer a rotating selection of champagne by the glass. (Diners will also be able to order from the restaurant’s extensive wine list.)
