With Saul’s Sandwiches, Nene Chicken, Hiyori Japanese House and numerous other grab-and-go joints already there, the stretch of Glenferrie Road between Barkers Road and Auburn Road hardly lacked takeaway spots. But that didn’t stop Benjamin Vaughan (ex-owner of Carte Crepes) and Michael Fee of Mile End from opening their newest bagel shop on the block.

The newly opened Hawthorn spot is the fourth store for the bagel brand. The Fitzroy-founded company recently opened a custom-built food truck in a repurposed car park just opposite Lido Cinemas. The menu is the same as at the three other locations: Fitzroy, Brunswick and Richmond.

For those unfamiliar with Mile End, that means made-to-order sandwiches, including the bestsellers – smoked salmon, dill and caper cream cheese, tomato and red onion, chicken salad and brisket pastrami.

They’ll all be served on Montreal-style bagels. Mile End is named for the Montreal neighbourhood of the same name, where two of the city’s best-known bagel shops, St-Viateur Bagel and Fairmount Bagel, are located.

Montreal-style bagels are boiled, then woodfired. They have a denser and sweeter dough than New York-style bagels. On a busy day, the Mile End team make 2000 bagels in their Fitzroy kitchen, then distribute them across the brand's four locations. There are six bagel options: everything, sesame, poppy, cinnamon and raisin, honey oat or rye.

Vaughan tells Broadsheet that the team are currently finalising plans for a fifth store and the next big “milestone” is to build a new flagship bakery.
