Melbourne chefs are popping up and popping off all over the city this week. Here are some of the one-off events, flavours and celebrations we’re excited about.
Carlton Wine Room’s Young Chef and Sommelier Dinner
Two Carlton Wine Room team members are taking over the venue this Thursday night for the third and final Young Chef and Sommelier Dinner. The dinners were created with the aim of allowing up-and-coming team members space to show off their ideas, with guidance from the venue’s senior team.
This week, third-year apprentice Darcy White and sommelier-in-training Sam Ross will be collaborating on a menu and matched wine offering. This Thursday’s menu will include house-made pork and orange sausage, zuni pickle and Jerusalem artichoke paired with Eric Bordelet Poire Granit Cider, and more.

Furrmien x Dean Wallflower
The theme is “struggle” and the dress code is “funeral” at this Friday’s collaboration dinner between former Parcs chef Dennis Young’s fermentation company Furrmien and chef-turned-graphic-artist Dean Wallflower.
Wallflower will be producing lo-fi 2D animations while guests enjoy a three-course meal for $44 per person in Brunswick. Kori x Tarts Anon
Tarts served à la mode are just better than tarts served on their own. Lucky for us, Bernard Chu and Gareth Whitton, respectively of Kori Ice Cream and Tarts Anon understand this. As part of Kori’s first-anniversary Ice Cream Collab Carnival, the two shops are pairing up to each offer two unique slice and ice-cream offerings.
This Friday August 25 to Sunday August 27 at Kori’s Hawthorn store there’ll be slices of tiramisu tart with coffee red bean ice-cream and rum baba tart served with caramel purin (a Japanese custard pudding) ice-cream. And at Tarts Anon Cremorne, the team will have their signature pear tart with nashi pear sorbet and a banana brown butter tart with miso banana caramel ice-cream.

Mr West x Kariton Sorbetes
Mr West, the Footscray bar and bottle shop in a former $2 store, is celebrating its sixth anniversary this weekend with the help of friends at Filipino gelateria Kariton Sorbetes. Stop by the pop-up for two versions of turon (a sweet banana spring roll or lumpia popular in the Philippines).
This Saturday August 26, Kariton co-founder John Rivera will be at the Mr West bar serving turon ice-cream sandwiches made with banana gelato, candied spring roll pastry and jackfruit caramel. To drink, there’ll be turon milk stout from Hop Nation in addition to the beer, cider, wine and cocktails served from the venue’s 24 taps.

Sogobri x Shop Bao Ngoc
Aminata Emmanuelle Diallo and Ngọc Trần are ones to watch in the Melbourne hospo world. This Sunday August 27 Diallo’s Sogobri is popping up at Trần’s Shop Bao Ngoc in Brunswick from 12pm until sold out. Everything on the menu is vegan and gluten-free, and there’ll be entremets (a French mouse layer cake) and Diallo’s signature coeur caramel, a miso and vanilla muffin with a salted caramel filling. Diallo will also serve vegan yassa, a tangy and charred Senegalese dish that is usually made with chicken, sauteed onions, Dijon mustard and lime; and bissap, a West African hibiscus drink.
