Mali Bakes’ Fitzroy cake window will have its last day on Thursday March 28. The tiny outpost of pastry chef Patchanida Chimkire’s bakery opened in June last year, quickly becoming a favourite among locals – it was also named one of Broadsheet’s best new bakeries of 2023.
When Chimkire, a trained pastry chef known for vintage-style cakes, opened the Moor Street window she took the opportunity to expand the bakery’s offering. In Fitzroy the Mali Bakes team, which also has a commercial kitchen and shopfront in Thornbury that is open on Saturdays, served treats including a roasted corn cheesecake, a matcha chiffon roll filled with sake-soaked cherries and white chocolate cream, and a strawberry chiffon cake filled with whipped ricotta cream and fresh strawberries, dusted with strawberry powder and topped with agar-agar strawberry jelly. These three desserts were intended to be part of a monthly-rotating menu, but became new Mali Bakes signature creations.
Chimkire tells Broadsheet the team will continue to sell slices at the Thornbury store as usual, and for the moment will focus more on Mali Bakes’ booming wedding and custom cakes business.

SIGN UPShe says the team has plans to continue baking both the matcha and strawberry chiffon rolls and are working towards offering full-size versions of the bakes that have previously only been available by the slice.
