Adam Liston, the chef and owner of Smith Street’s Northern Light Yakitori Bar, is closing his Collingwood restaurant and setting up in the CBD.
The exact location of the new venue is still under wraps, but Liston confirms he’s collaborating with the Halim Group, which owns Hotel Windsor on Spring Street. The space will initially be, “A restaurant in a restaurant at the top end of Bourke Street,” says Liston.
The chef, who says he’s “outgrown the space on Smith Street”, is taking his head chef Joel Baylon with him. The initial operation will be a 20-to-30 seat pop-up in what will eventually become the restaurant proper; a 150-seat venue.

SIGN UPListon will maintain the theme he’s created on Smith Street, with yakitori punctuated by dishes with Korean, Chinese and other Japanese influences.
You’ve got until the end of February to visit Northern Light. The as-yet-unnamed city venue will open in May.
