Sushi Baby has been a favourite among Bayside locals since it opened as a takeaway spot in mid-2023. The popularity of the venue, which is part of Atlantic Group (The Atlantic, The Goods Shed), prompted a redevelopment to provide a full dine-in experience, and the redesigned Sushi Baby now offers indoor and outdoor dining, complete with a charming cherry blossom courtyard and a wall upon which anime is projected.

Coming on board as head chef is Chloe Kim, previously an Atlantic Group caterer, who specialises in Japanese cuisine. Here, Kim’s kaiseki-style menu mixes Japanese techniques with Australian and Korean inspiration.

Dishes include the nori tacos, with homemade battered shells filled with rice and Wagyu beef or salmon. Then there’s the tempura soft-shell crab with sake soy and aioli, and a sweet chilli chicken karaage served with kewpie mayo and homemade ’slaw. Like your dish with a little drama? Try the king prawns topped with yuzu dressing, torched at the table aburi-style on a salt block.

“We wanted to create a cool Japanese eatery that people felt was approachable and reasonably priced,” says Atlantic Group founder and managing director Hatem Saleh. The entire menu – with the exception of two sushi platters designed to be shared – is priced under $22 per dish.

The drinks menu includes a range of sakes, wines and cocktails. Saleh’s top two choices are the elderflower fizz, with St Germain gin, yuzu puree, lemon juice, soda and mint; and the citrus tea with sake, green tea, yuzu lemon juice and honey syrup.

There’s also a to-go menu, with hot and cold dishes as well as nigiri, inari and sushi rolls, all menu items that Saleh says are designed to stay fresh and flavourful during the journey home. There’s also the bright pink “Big Boy Box,” which offers a 62- or 85-piece mix of sushi.

Mim Design oversaw the redesign, opting to create a whimsical yet sophisticated space. A distinctive shade of apricot pink was chosen for the front room’s walls, complemented by a pink tiled bar and tables. Calming shades of green punctuate the pink, especially in the outdoor laneway, which features vertical garden walls and cherry blossoms overhead.
