What do you do when your personal training clients are all in search of a quick and healthy post-workout snack? Open your own cafe and satisfy the demand.

Nutrition Bar’s Eli Censor studied as a PT and now owns seven KX Pilates centres across Melbourne and Sydney. Seeing a huge gap in the market, she and mother Marianne Censor created a place offering snacks as close to what you’d make at home after exercising, adhering to the goals, macro and calorie requirements of active people.

After doing research in the more health-conscious cities of America, they opened Nutrition Bar in Richmond, filled with green smoothies, acai bowls, protein shakes and balanced salads. Noticing the influx of customers from gyms around the Windsor area, Censor opened a Chapel Street branch. A third on St Kilda Road caters to workers strapped for healthy choices in the isolated business area.

The grab-and-go fridges offers kombucha, almond mylks, cold-drip coffee and raw cakes such as tiramisu and choc-mint slice. Salads are made fresh in-store each day, with mini savoury snack options such as falafel bites.

The Richmond store also hosts kombucha-brewing workshops when there’s enough demand.
