Victoria’s Four Pillars Gin is on the up and up. It’s just been announced that its Healesville distillery is set for a $6 million expansion, which will kick off on February 8 and is slated to take 12 months.
A huge new gin hub will be constructed on Lilydale Road, directly adjacent the existing distillery and cellar door. There’ll be room for 250 people across new bar and events spaces, as well as a new German-designed still, a retail space and “a special sensory surprise” that the team says needs to be experienced to be believed.
Overseeing the project is Victoria’s award-winning, sustainable-design firm Breathe Architecture, which plans to incorporate solar power and waste-minimising features into the design.
During the build, it’ll be business as usual at the original site, which will remain as-is after the extension opens.
Cameron Mackenzie, Stuart Gregor and Matt Jones founded Four Pillars in the Yarra Valley in 2013. And last year they set up shop in Sydney, opening what our writer called a “Disneyland of gin”.
But the Aussie gin brand isn’t just making waves at home. It was crowned International Gin Producer of the Year in 2019 and again in 2020 at the annual International Wine and Spirit Competition in London.
The Four Pillars expansion is due for completion in December 2021.
