Sydney Instagram sensation Andy Bowdy names his cakes after his mates. This huge chocolate tower is named after Karl. It’s topped with meringue, chopped up Snickers and flowers. Inside there’s layer upon layer of different chocolate textures.

None of Andy Bowdy’s cakes will ever look the same. He takes pride in this; precision is not something he strives for. He has a more freestyle artistic vision, but still pays close attention to composition and detail.

With Bowdy announcing his new cafe in Enmore will open this month, here's an insight into the dessert master's process.
