Timely Coffees
Timely Coffees is a spacious, community-focused roaster and coffee shop in semi-industrial Bayswater. For co-owners Tristan Fraser (Oh So Deli), Giorgia Muscio and Seb Prosser, it’s all about making the world of coffee more accessible, sustainable and queer-friendly.
The team works with producers from Burundi to Papua New Guinea to source green beans for its single origins, blends and seasonal releases. Everything is roasted on-site and if the coffee’s on the shelf, you can probably order it – whether in an espresso, batch brew or take-home bag.
The grinders here churn through the popular Timely Two, a Brazilian single origin that’s nutty, chocolatey and smooth, and goes perfectly with milk. The batch brew offering might be the light, bright and complex Timely Three, or a brew from another Perth roastery. Guest roasters are welcome on most fronts here – labels like Hop Cafe, Artem Coffee and The Wolf Espresso also roast their beans at Timely’s carbon-neutral roasting facilities.
While coffee is the main draw, there are also baked goods by From Scratch Small Batch to tide you over. The crowd-favourite carrot cake is equally sweet and spicy – and often sells out early. But it’s not hard to settle for a peanut butter cookie or pumpkin spice bar if that’s the case.
Once you’ve ordered, perch at a spot in the bright and spacious warehouse. Muscio and Prosser designed most of it, bringing in verdant indoor plants and rainbow and transgender flags to show off Timely’s values. The fit-out is resourceful without being scrappy: the coffee bar and outdoor tables are made from reclaimed pallet wood, while the cupping table was made with upcycled floorboards from the Western Australian Museum. Up the front, open shelves are lined with Timely’s signature red coffee bags, brewing gear, compostable coffee pods and merch. While cups offer up free queer-friendly and pronoun badges to take away with your coffee.
