Scandinavia and Japan are half a world apart, but brothers Daniel Jackson and Corie Sutherland combine the two cultures seamlessly at Edition Coffee Roasters.
The result is a beautifully presented menu of about eight seasonal dishes served with a delicate, woodsy feel. Try wild boar meatballs with lingonberry and potato; smorrebrod of sake-cured beef, pickles, seaweed and blackberry; or matcha hot cakes with passionfruit and preserved plum.
Jackson and Sutherland select single origin/estate green beans and roast them for batch brew, pour-over, aero-press, Japanese drip and cold brew. The selection of teas includes Chung Feng jasmine from China and Gyokuro sourced from Japan.
The Nordic-Japanese blend can be felt everywhere, from the honeycomb of white counter tiles, to the concrete floor and lean aesthetic – but if you need more evidence, keep an eye out for the house Danish filled with Japanese umeboshi plum.
On Fridays and Saturdays Edition stays open for dinner. Expect modern, izakaya-style share plates such as the seared kangaroo tataki with kombu crème fraiche, a spicy yuzu kosho dressing and fresh plum. There’s also spanner crab gyoza and a cornflake-crumbed pork katsu burger with ginger-spiked slaw and bacon. These are matched with sake and shouchu options from Black Market Sake chosen by sake sommelier James Heggie.
