At a pretty corner of Parramatta’s Prince Alfred Park sits Lil Miss Collins, a rustic pop-up cafe that brings the farm to the city.

Owner Tony Moussa spent his career in hospitality, managing clubs and hotels in Sydney. For someone whose “love for food and coffee didn’t start until a couple of years ago” he’s been quick on the uptake. He’s created a menu of hearty dishes with delicate flavours, and he roasts his own coffee.

The pop-up is far enough away from the busy Parramatta station to be peaceful; drawing a steady stream of customers to the other side of the river.

The small building was designed and built by Moussa and his dad. The structure is made of recycled materials sourced by knocking on doors at farms all over country New South Wales. “The farmers were really intrigued, and a couple have even come to the cafe,” says Moussa.

Menu favourites include the ricotta hotcakes topped with tumbling stacks of strawberries and edible flowers, and the Wagyu burger complemented by Lil Miss Collins’s secret sauce: beer chutney.

“After you eat a burger you often feel sick and wonder, ‘why did I do that?’” he says. “The flavours of our burger are light, the meat is juicy, and people feel good after eating it.”

The morning coffee rush is populated by office workers and mums with prams seeking the Lil Miss Collins Orthodox Blend. Lil Miss Collins will only be in Prince Alfred Park until the end of July.
