The Love Tilly Group (Love, Tilly Devine, Dear Saint Eloise, Ragazzi and La Salut) ) has brought its pasta shop, wine bar and deli to the ground floor of Balmain’s historic Exchange Hotel.

Diners can expect a swag of favourites from the CBD Fabbrica on the menu – such as the bitey and creamy spaghetti cacio e pepe; mafaldine with ‘nduja and prawns; conchiglie with spanner crab and corn; and tonnarelli with sea urchin, chilli and garlic.

But there’s more than just pasta on offer. You’ll also find cured meats; tuna crudo with pasta fritta; focaccia with anchovies; and cotoletta alla Milanese (beautifully thin slices of veal, crumbed and fried), chef Scott McComas-Williams’s tribute to the traditional pub schnitzel – and to the old Exchange, where it was a menu mainstay.

Fitting with the pub theme, eight copper taps are pouring suds from local and international breweries, but vinophiles need not fret. The team is still offering some of the best natural wines from Australia and Italy, naturally.

Fabbrica Balmain is now open at The Exchange Hotel, 94 Beattie Street, Balmain.
