Sydney’s burger enthusiasts were left with growling stomachs after the Burgers by Josh pop-up packed up shop at North Sydney’s The Upper Deck two months ago. However, chef Josh Arthurs has announced his return to the very same location.
In 2015, Arthurs began the Burgers by Josh project, a concept that allowed him to take over kitchens around Sydney, and cater to an ever-increasing crowd seeking his high-stacked burgers. His events became so popular they needed to be ticketed. Burgers by Josh has now found a large, loyal fan-base on the lower north shore. “The best thing about moving around Sydney with the pop-up is meeting new customers from new areas,” Arthurs says. “I have a following of customers from all parts of Sydney, which is incredible.”
For a hefty, meat-filled feed, try the signature The Infamous Primo: two Wagyu patties, bacon, double cheese, onion rings and jalapeno peppers both inside and atop the burger. Chicken burger devotees should order The Colonel with Southern-fried chicken with American cheese, lettuce, tomato and Mississippi mayonnaise. If you’re vegetarian, try the Lisa Simpson, a slow-cooked field mushroom with secret sauce, beer-battered onion rings, iceberg lettuce, cheese and pickles from local Sydney start-up, Westmont Picklery. Add a basket of Jurassic fries with jalapeno sauce and liquid cheese and you may need to skip breakfast the next day.

SIGN UPThe bar will include a range of artisan spirits and a beer list featuring Sydney Brewery, Young Henrys and Badlands Brewery. There will be a burger special each Thursday. In the future, Arthurs hopes he’ll settle down for good. “A permanent shop is definitely on the cards.”
