Cousins Stefano De Blasi and Edoardo Perlo founded Salt Meats Cheese in 2012, four years after moving here from Italy. The pair was disenchanted with the lack of affordable Italian and European products available in Sydney.

The group of grocers and fast-casual restaurants has since grown to include spots in Mosman, Drummoyne, Surfers Paradise, Broadway and Bondi Junction. More will no doubt follow.

Alexandria is where it all began, though the original Bourke Street site is no more. It was replaced by this commercial kitchen, cooking school and night-time pizza joint on Fountain Street.

By day the space is used to teach pizza, pasta and cheese making. The whole space can also be booked for corporate team-building exercises or private parties.

After sundown, it’s another place to enjoy the classic, affordable pizzas Salt Meats Cheese has become known for. There’s a half-dozen to choose from, including Margherita, capricciosa, spicy diavola and truffle mushroom.
