Jane has just refreshed its Australiano menu, available 5pm-6pm Monday to Thursday, and 4pm-6pm Saturday and Sunday. New items include smoked pork hock croquettes and grilled cucumber with river mint oil – but don't worry, the lamb saltsbush dumplings and ’roo tartare ain't going anywhere.

Jane is the sibling venue to Surry Hills fine diner Arthur, both locations named after owner-chef Tristan Rosier’s grandparents. Similar to its three-blocks-north counterpart, it has an all-Australian ingredients focus, but with a more casual approach and vibe.

The restaurant’s ‘70s-style design was inspired by Rosier’s grandmother’s Southern Highlands home, with a fit-out of brass and marble, and hues redolent of the Australian bush. There’s seating for 44, ranging from candle-lit booths to comfortable banquettes and bar stools.

Dishes might include kangaroo tartare with bush tomato chutney and crisp shoestring fries; raw kingfish with pomelo and ginger; and a main of Murray cod topped with saltbush and a curry made with 45 native ingredients.

While the menu is continuously evolving, there’s one dish that won’t be dropped: Jane’s Pink Cake. Based on a dessert his grandmother would make for him, Rosier’s version has layers of vanilla sponge, meringue and bay leaf-infused cream, topped with strawberries, candied rosella flowers and ruby chocolate clusters.

And, to soundtrack the dining experience? Rosier curates playlists reminiscent of the ’70s, spinning through jazz, funk and David Bowie hits.
