It’s been less than a year since gelato truck Billy van Creamy hit the streets, but brothers Alex and Mitch Wells have kept busy.

They road-tripped to Splendour in the Grass and Strawberry Fields; filled countless cones at their semi-permanent base at Ruckers Hill in Northcote; and appeared multiple times at Welcome to Thornbury.

Now, they’ve opened a shop a few doors from Piedemonte’s, in North Fitzroy. It’s just a short stroll from your next picnic or barbeque at Edinburgh Gardens.

The 30-seat space is decked out with communal tables and playful cone murals by artist Billie Justice Thomson. It doesn’t look much like a pop-up – the clean timber lines and massive service counter look as architecturally savvy as the average permanent Melbourne venue.

Initially, it’ll offer the same flavours as the truck, which will continue roving. If you’re unfamiliar with Billy van Creamy, it’s about nailing the classics: hazelnut, pistachio, lemon, vanilla and the like. Or has been – this address has a kitchen the brothers are keen to use for experimenting.

Each flavour uses only five ingredients: the base flavour (for example fresh mint or roasted macadamias), Demeter milk, cane sugar, cream and an egg-yolk stabiliser. Everything is organic except the cream. This is about as pure and tasty as ice cream gets.

In addition to gelato, there’s a small drinks menu offering affogato, iced coffee, cold drip and batch brew, all made using Industry Beans roasts.

The duo has the site until March 2016, with the option to extend the lease. “If it goes off, we’ll probably try and keep it,” Mitch says.

Billy van Creamy will open at 12pm on Friday, December 18.
