Par, the slick Brunswick Street cocktail bar, will pour its last drinks on Monday February 5.

The Fitzroy spot is co-owned by bartender Tim Pope, his wife Aimee Pope who ran the wine program, and famed bartender Tony Huang (ex-Lui Bar), who met Tim while the pair were working together at Cloakroom Bar.

Par announced the closure via an Instagram post saying, “It’s with a heavy heart that we announce the closing to our time here with PAR.Fitzroy with the last service being the 05/02/24.

“It’s been an amazing 2 years with incredible highs and lows as independent operators, with one of the largest and fulfilling learning curves of our lives.”

The bar is known for serving “neo cocktails” or high-concept drinks made using a three-day process. It became known for serving cocktails in wine glasses and for its lack of bar tools such as shakers and stirrers. Drinks are pre-mixed due to the lengthy process, and no shakers or stirrers on hand means the team dilutes cocktails with tea-infused water (which adds an extra layer of flavour) rather than adding ice.

But it’s not all bad news. The post teased that the bar will be back in pop-up form soon, and shared plans to eventually find another permanent space.

“This isn’t the end; we will be taking PAR mobile temporarily via events/pop-ups and our online shop will be launching soon, so you can continue to enjoy the PAR experience in the comfort of your own home, until we find our new home for PAR 2.0.”

Par will close after service on Monday February 5.
