Charles & Gamon is named after the two streets it sits on the corner of. The restaurant and bar was previously known as Sabroso, now it's owned by Ashley Freestone.

The rebrand also brought a change of focus, to ethically and sustainably sourced cuts of meat. The menu isn’t influenced by any one cuisine – it’s more about presenting meat in a variety of ways.

To start there’s a range of salty beer snacks and sliders, plus charcuterie and terrines. Larger options include confit lamb shoulder, steak, pork and pan-fried fish. There’s also a smaller range of vegetarian dishes, such as a mushroom tart with shallot puree, silverbeet and Gruyere.

At the bar, there’s a big focus on local breweries and small wineries. The drinks list of 30-odd names rotates regularly and all wine is available by the glass. Cheese is on hand for matching.

The interior trades in polish for something a little bit raw and rustic, with warm wood tones. Although some may find it slightly unsettling to see a cowhide or a stag head hanging on the wall while they eat meat from that animal, at least there’s no mistaking the theme.
