Over the past decade, Potts Point bar The Roosevelt has become something of a local institution for channelling glamorous mid-century style and drinks. Soon its team – who also operated pop-up bar About Time in the CBD – will turn to the tropics for inspiration, with the launch of Tucano’s, a new tiki-inspired bar in Surry Hills.
Here, tropical flavours will be combined with aperitivo twists, pulling together rum, vermouth and amaros with tropical fruits.
“We’re really looking forward to serving up a more modern take on classic tiki and bringing
something fun and distinctive to the local area,” general manager Steve Davis (ex-Opera
Bar) said in a statement. “We’ve always been fans of both tiki and lighter, spritzy amaro-based drinks, so it’s exciting to bring those worlds together. A tropical aperitivo – what’s not to love?”

SIGN UPThe team has brought chef Naomi Lowry (ex-Biota, Pilu, By Fassnidge) on board to put tropical spins on Mediterranean standards.
Tucano’s has taken over the space occupied by Surry Hills classic Cafe Lounge for 20 years, and fully refurbed it with colourful murals and tropical prints.
Tucano’s will open in early August at 277 Goulburn Street, Surry Hills.
