Italians know how to do summer. An aperitif in one hand and cured meats in the other, watching the afternoon lazily roll by. The Bucket List in Bondi is the place to get that Amalfi Coast feeling this summer. The beach favourite will dedicate a whole month to the Aperol Spritz.
The sunny deck will transform into Aperol Beach Club: a sea of orange umbrellas, custom surfboards by Gunther Rohn, a dedicated Aperol bar and a special members-only entrance.
There will be four different Aperol cocktails to choose from – one featuring a frozen treat. The Popsicle Spritz is an Aperol Spritz served with a blood-orange popsicle inside it. No gelato van can compete with that. The standard Spritz will only set you back $10 if you like to keep your popsicles and drinks separate.

SIGN UPRock oysters and calamari fritti are the perfect match for a summer Spritz, according to Bucket List chef, Tom Walton. There will also be share boards with San Danielle prosciutto, cheese, grissini and olives if you like your aperitivo authentic. Aperitivo is a tradition in northern Italy where snacks are eaten with laid-back afternoon Spritzes.
Italy is freezing this time of year; if we can’t be by the water at a beach club on the Amalfi Coast, we will happily soak up the sunshine, rolling up prosciutto and drinking an afternoon aperitif overlooking the water in Sydney.
Aperol Spritz
Makes one
Approximately 1.4 standard drinks
Ingredients
90ml prosecco
60ml Aperol
30ml soda water
Two orange slices
Method
Fill a wine glass with ice, add the slices of orange.
Pour in the prosecco and Aperol. Add a dash of soda water to finish, which will ensure the Aperol doesn’t settle in the bottom of the glass.
