The Apollo is Jonathan Barthelmess (Manly Pavilion) and fellow Greek Australian, Sam Christie's (Longrain Sydney and Melbourne) first joint venture.

The Apollo is a showcase of the cuisine that Barthelmess has become known for and reflects both the influence of his mentors, Stefano Manfredi and Janni Kyritsis, as well as the chef’s own heritage and roots.

The focus here is on the share plate aspect of Greek food, with the menu including dishes cooked over wood-fire and served with an accompaniment of Greek yoghurt, or the ‘full Greek’ (at $55pp for a whole table) with white cod roe taramasalata and slow cooked lamb loin.

Architect George Livissianis has employed a minimalist feel on the space – which is named after the Greek god of poetry, light and music – incorporating exposed concrete, granite and brass touches, designed to hint at the rocky beauty of Greece.
