Ibushi is a hip robata-style restaurant specialising in open-flame cooking, and has been described by the team as ‘Japanese firedoor’. It’s one of six venues within the multi-building Prefecture 48 precinct, a heritage-listed spot that celebrates the diverse cultures across Japan’s 47 prefectures.

This spot is all about casual fun and fire, contrasting with refined neighbour Garaku. You might order robata-grilled beef tongue with Japanese salsa verde and shishito; beef tartare with a golden confit egg yolk; and yuzu kosho tuna tartare with crispy sushi rice.

Every detail of Ibushi is inspired by fire and smoke, from the ash-grey walls emulating charcoal in the robata grill, to the art installation that replicates the movement of smoke.
