Husband-and-wife duo Bill and Mary Solos are making their mark on Brighton, one restaurant at a time. Their Martin Street spots include the Mediterranean-inspired Ten Greek Plates and Mastic Food and Wine, and now Tide Fish Bar.

The new bayside fish’n’chipper is serving all the old-school staples, but with a slightly modernised and Mediterranean approach – a nod to the couple’s roots. “My husband and I are both Greek and grew up in [Melbourne] hospitality,” says Mary. “We were your typical Greek family who went from one fish’n’chip shop to another.”

Here, find Aussie and New Zealand-sourced fish, served either grilled or fried in crispy golden batter. There are also crowd-pleasers such as hulking hand-cut potato cakes (a must), flash-fried calamari, and tempura-battered prawns and scallops.

Burger-wise, expect Wagyu beef, fish (grilled or fried) and chicken schnitzel – all served on fluffy milk buns. You’ll also find Baja fish tacos with Fancy Hank’s hot sauce, sweet-potato fries, vibrant salads (including the “smashed” falafel and a crisp rainbow slaw), plus ample gluten-free and vegetarian options. And for dessert: bougatsa, a Greek custard-filled pastry.

“We’re not trying to reinvent fish’n’chips,” says Mary. “We just wanted to make it that little bit … more refined.” But she insists it’s an all-are-welcome situation – regardless of how sandy your feet are.
