Hotel Sorrento, a pub and hotel that has been a mainstay of Mornington Peninsula town Sorrento for more than 150 years, will unveil a luxury transformation in December.

After recently refurbishing its existing guest rooms, the clifftop hotel has evolved even further, adding another 13 sumptuous suites that will incorporate limestone, travertine and timber in their design to reflect the surrounding landscape. Each suite will have an outdoor marble bathtub and be decked out with custom-made Jardan furniture and Hunter Lab bathroom products. The venue continues to be run by Rob and Anne Pitt, who took it over in 1981, and now their children Bridget, Myles and Marcus Pitt.

“The expansion was an opportunity for us to evolve Hotel Sorrento into a leading travel destination while honouring its 150-year history,” Bridget tells Broadsheet. “It was particularly important that the new development complemented the beauty and architecture of the existing heritage building while carefully preserving its original detail.”

The expansion also includes a 30-metre pool, set into a terrace lush with greenery and olive trees, with views over Port Phillip Bay. A secluded new spa, operated by local business Marlo Spa, will offer massages and fire and ice therapies. Bridget says the menu will expand to include tailored retreat packages designed by wellness experts from around the world.

Hotel Sorrento’s renewal complements its two existing restaurants – including Cantonese-inspired diner Shihuishi – and five bars.

“The new development will elevate the hotel to a resort in terms of offering and look and feel,” Myles tells Broadsheet. “While our regulars will always be able to have a parma and pot in the front bar, guests staying in the hotel will notice a new level of luxury and amenity.”
