Wine bar Margot’s is a spot for a post-work wine, dinner or a fresh deli selection to take home. It opened on William Street last month, and is the latest venture from Sesh Mafia, the team behind Papi Katsu and Shui in Subiaco. It’s next to big-name neighbours like Wines of While and Vincent.

“It's a great corner of town … There’s a nice flow between venues, creating a little precinct of grown-up drinking spots that still manage to keep things fun,” bar manager Nicola Herbert tells Broadsheet.

The kitchen serves a European-inspired menu by head chef Branagan McGann (ex-Republic of Fremantle) and culinary director Chase Weber. Charcuterie is by Adam Bielawski.

There’s a cold-smoked trout tartare served with crispy potato chips and an egg steeped in hot sauce, and the smoked cuttlefish lasagna with tomato and Reggiano. Little Home Bakery's rich, malty spent grain sourdough is made from leftover brewing grains and paired with Margot’s house-whipped butter.

“Our smoked olives have become one of our signature items. They’re actually triple smoked,” says McGann. “We smoke the olive, the brine and the olive oil that tops it, all in different ways to really amp-up the flavour.”

The deli sells beetroot and spicy green tomato relishes, Cantabrian anchovies, and jars of zucchini ribbons and house-made pickles. From sausages to terrines and pâtés, every item marked with the M-logo is made in-house.

Margot’s also serves Yarra Valley salmon pearls alongside European varieties of caviar like Osietra and Beluga. The cheese selection covers mature cheddar, camembert and French blue. Brets chips and Superbon (Spanish made chippies) are a gourmet twist on the classic crisp.

“Guests are welcome to choose their favourites from the deli, and we’ll assemble it for them and serve it up,” says McGann. “We’re also happy to offer recommendations on which cocktails or wines pair best with their selections.”

There are seven Martinis on the drinks menu. But bar manager Nicola Herbert, formerly of Foxtrot Unicorn, is quick to point out that Margot’s isn’t only about Martinis.

“It’s about a good cocktail and we’ve got a great selection of classic cocktails and Martinis on the menu,” says Herbert.

The venue’s cellar door offers a range of European and Western Australian wines for dine in service. The bottle shop stocks favourites from Manjimup, Frankland River and Margaret River.

“We have a fun selection of wines, from light aromatic whites to bold, full-bodied reds from Margaret River, and even some beautiful chilled reds,” says venue manager, Caitlin Tormay. “We really make the most of the deli area, hosting free tastings every Friday afternoon.”
