Winston, a New Orleans-inspired small bar on William Street, launched with a cocktail called In a Gadda Da Vida. Named after a ’60s rock tune, it perfectly encapsulates the soulful mood of the venue. Defined by its smooth jazz tunes, creative cocktails and wholehearted embrace of the flavours of the American South, the small bar shares a wall – and owners – with Nashville chicken joint South Bird.
“The idea was always to open a Nashville fried chicken restaurant and keep that Southern theme going in the adjoining venue,” Winston co-owner Kabir Ramasary tells Broadsheet. “Both spots are urban with a dive bar feeling, which makes them work really well together.”
Guests are greeted with soulful jazz, exposed brick walls, dim lighting and half a dozen wooden tables. The space is modelled after Ramasary’s favourite bar, Sydney’s now-closed Bulletin Place. “It was kind of cramped but warm and happening, and that’s exactly what we want Winston’s to feel like.”

SUBSCRIBE NOWAs well as a clutch of beers, wines, spirits and classic cocktails, the drinks list includes four weekly cocktail specials – one sweet, one sour, one stiff and one surprising – created by veteran mixologist Pete Long (Hula Bula Bar, Ezra Pound).
The food menu is likewise Louisiana-inspired with Creole-spiced corn ribs; po’ boy sangas with crunchy fried chicken; mac’n’cheese with caramelised okra; cornbread with sweet honey butter; andouille sausage; and jambalaya balls with chicken and andouille.
