This particular silky serve first took over feeds last year, after an Instagram carousel zooming in on the squared-off serve at Florence’s Vivoli Gelateria went viral.

The angles! The creaminess! That shot of the espresso pouring straight into the cup. It’s art.

If you think so too, hop to Fior in Gymea, where a Sydney-fied version of the exceptionally photogenic affogato rides on a sweet doily with cobalt blue accents.

“We always love a little moment at the end of the meal,” Fior co-owner Rebecca Fanning tells Broadsheet. “And the affogato is synonymous with Italian. We knew we had to have it on the menu, and we loved the images and videos coming out of Italy – [we wanted] to do something which we hadn’t really seen in Sydney.”

Here are the details:

What: an affogato with fior di latte gelato and Artificer coffee.
How: the gelato is churned in-house, scooped into a mug and sculpted to form a creamy nest. Then, a double shot of “the best coffee roaster in Sydney” Artificer’s seasonal blend is dosed in. If you’re feeling fancy, add a shot of Brookie’s Mac Liqueur, for an Aussie touch.
Cost: $12, or $18 if you ramp it up with Brookie’s.
Where: Fior from 5pm on Tuesdays, Wednesdays and Thursdays, and from 11.30am on Fridays, Saturdays and Sundays.
