After only a few months of service, Eli Rami and Sam Holman – the team behind much-loved coffee spot Blackout and wine bar Noir – have made the decision to close Misspelt, the tiny pastel-pink bakery they opened in Paddington in October 2022.

They made the announcement last week on Instagram, writing that having “assessed the viability of selling bakery goods and tested a few new ideas, the demand [for] deli-style sandwiches has far outweighed the demand for baked goods”. Speaking to Broadsheet in October 2022, the pair were confident that Paddington would embrace their range of pastries and bespoke breads – but it was the sandwiches they later added to the menu that ended up flying off the shelves.

“We weren’t set up as a sandwich shop, but we launched the sandwich menu in November as a way to get rid of the excess bread and reduce waste,” Holman tells Broadsheet. “We were selling out of the sandwiches and having to throw croissants and pastries in the bin at the end of the day.”

Reluctant to ignore a clear sign, the duo decided to pivot – initially planning to open their own sandwich shop. But, after some reflection, Rami suggested they approach the sandwich savants at Sunny Side about taking over the space.

Since opening in Windsor in late 2021, Sunny Side Sandwiches has developed a reputation for selling what Holman describes as “pretty banging sangas”, ticking off all the hits with oozy bacon-and-egg rolls, stuffed schnitzel sandos, two-hander Reubens, and egg-and-cheese sandwiches.

Now, Sunny Side is bringing its range of deli sandwiches – and its maximalist canary-yellow look – to the former Misspelt spot. Although they’re stepping back from the venue, Rami and Holman aren’t going far: they’ll still be serving their signature coffee next door at Blackout.

Pastry fiends can rest assured – your needs will still be catered for. Rami and Holman have begun baking in-house at Blackout, offering a concise range of croissants, pain au chocolat, danishes and cinnamon scrolls. (With no kitchen, Misspelt had been outsourcing production of its pastries to Chouquette, Cordelia Sourdough Bakehouse and Farine & Co).

Sunny Side Paddington is set to open in late February.
