Chef Louis Tikaram is taking inspiration from old-world Hong Kong for Stan’s, the new bar he’s opening on the refurbed second floor of his restaurant Stanley.
Speaking to Broadsheet, Tikaram said: “My first visit to Hong Kong as a young chef absolutely blew my mind. I was captivated by the street food and barbequed meats – however, it was the high-end restaurants that left the biggest impression. We often think of Cantonese food as quick and simple but, when you pair those flavours with quality produce and exceptional service, it elevates the entire experience. That’s exactly what we aim to bring to Stan’s.”
Alongside Tikaram’s menu of sophisticated Cantonese bites, the bar will serve cocktails made with hard-to-find spirits.

SUBSCRIBE NOWWhen asked how he imagines diners using the space, Tikaram is far from prescriptive. “Stan’s offers something for everyone. Just like Stanley, which provides everything from a quick bite after work to an unforgettable special occasion and everything in between, Stan’s will do the same, plus the added allure of a late-night venue.”
With a vintage JBL sound system, dancing will be encouraged when the venue opens in early October.
Tikaram is one of Brisbane’s best known chefs, having done time at several of Sydney’s top restaurants, including Tetsuya’s and Longrain, before making a name for himself as the founding chef at EP & LP in Los Angeles. He returned to Brisbane to open Stanley in 2019. Four years on, Stanley is one of Brisbane’s best restaurants. This is Tikaram’s first opening since 2019.
Stan’s will open on the second floor of Stanley, 5 Boundary Street, Brisbane, in early October.
